You possess considerable expertise as a hotelier in Asia, particularly in Malaysia. What have been your most significant experiences in the country?
One of my most notable experiences in Kuala Lumpur was the successful inauguration of two 5-star hotels in 2022, alongside a remarkable and dedicated staff. The initiative remarkably garnered the attention of the local community upon its opening two months after international borders reopened for travel during the COVID-19 epidemic. This accomplishment exemplified the team's diligence and commitment, highlighting the efficacy of teamwork and innovation within the Malaysian hospitality sector.
I am profoundly appreciative of the opportunity to work in Malaysia; it is a significant period in my life and intricately linked to my professional development. I have had the honor of collaborating with exceptionally skilled and diverse teams, gaining insights from their distinct viewpoints and cultural backgrounds. The evolving hospitality sector in Malaysia, characterized by continual innovation, has presented both challenges and opportunities for skill development and industry contribution.
In addition to professional accomplishments, the cultural immersion has been profoundly memorable. Engaging with the dynamic Malaysian culture, encompassing its varied gastronomic offerings and profound customs and festivals, has significantly enhanced my life. Establishing significant connections with coworkers, hotel guests, and friends from all origins has been a highlight, cultivating a profound respect for the nation's distinctive cultural amalgamation.
This is where I encountered Debbie, my wife and the love of my life. I shall forever be thankful to Malaysia for being the location of our meeting.

As an aficionado of gourmet cuisine and distinguished wines in Kuala Lumpur, how would you characterize the progression of the food and beverage landscape in the Malaysian capital over the last ten years?
The food and beverage scene in Kuala Lumpur has significantly diversified and evolved during the previous decade. There has been an increase in independent cafes, innovative restaurants, and upscale pubs. The emphasis has transitioned to distinctive culinary experiences, with chefs integrating international ideas and highlighting regional ingredients.
The introduction of Michelin Star Awarded restaurants in Kuala Lumpur has significantly enhanced the city's food and beverage landscape. The quest for Michelin accreditation has forced numerous restaurants to elevate their standards of culinary excellence, service, and overall dining experience. The introduction of the Michelin Stars Award has positioned Kuala Lumpur on the international culinary landscape, drawing gastronomes and travelers globally. The existence of Michelin-starred businesses has fostered the cultivation of a more refined and proficient culinary workforce. Chefs continually challenge conventions to devise innovative and distinctive meals that fulfill the rigorous criteria established by Michelin standards.
Although the Michelin Guide has certainly exerted a beneficial influence, it is crucial to acknowledge that Kuala Lumpur's food and beverage sector was flourishing prior to the introduction of Michelin stars. The city provides a varied array of culinary experiences, from street food vendors to high-end restaurants, accommodating varying preferences and financial capacities.
Kuala Lumpur has become as a prominent destination for wine aficionados. The city features an increasing array of wine bars and restaurants with remarkable selections, providing options from traditional Old World wines to intriguing New World finds.
The substantial expansion over the past decade has led to an expanding middle class with discretionary cash, hence increasing the demand for premium dining experiences. The influence of social media personalities on platforms such as Instagram and Facebook has expanded the reach of food and beverage enterprises, fostering discovery and generating trends. The government has bolstered the food and beverage sector through measures that promote tourism and culinary arts, resulting in a flourishing F&B ecosystem.
Kuala Lumpur has established itself as a global culinary center, presenting a dynamic and ever growing landscape for residents and tourists alike. This has been very encouraging for me in the design of food and beverage concepts within the hospitality sector.

Which wine lounges and cocktail bars in Kuala Lumpur do you prefer?
Debbie and I own a limited selection of establishments I have frequented; however, Kuala Lumpur boasts numerous additional exceptional wine lounges and cocktail bars to discover. I consistently advise consulting online reviews and securing reservations beforehand, particularly if you want to visit during peak hours.
“Vintry” wine bar is a quintessential selection featuring a comprehensive wine list, ideal for both casual and dedicated wine aficionados. They have an extensive selection of wines available by the glass and bottle, accompanied with exquisite food pairings.
“Wine Knot” provides a casual ambiance accompanied by a commendable assortment of wines and light refreshments. I appreciate their interior architecture and the overall warmth of the atmosphere, which is distinctly reminiscent of a wine cellar.
As wine enthusiasts, we appreciate venues where we can choose wines from the cellar and savor them on-site. The experience becomes engaging and gratifying when it complements the meal you have selected.
For cocktail establishments, I recommend "Penrose," renowned for its inventive and imaginative cocktails. It is a favored location for individuals desiring an elegant and fashionable bar experience.
Coley is a speakeasy-style pub that provides a sophisticated and intimate atmosphere, including meticulously created cocktails.
Which eateries do you prefer in Kuala Lumpur?
Kuala Lumpur presents a remarkably diverse gastronomic landscape, making it challenging to select only a few favorites. However, several of my preferred locations comprise:
District of Columbia By Darren Chin – a 1-Star Michelin establishment — has been a prominent fine dining venue for the past decade, renowned for its exceptional interpretation of contemporary cuisine.
Sassorosso and Osteria Gamberoni are two of my preferred Italian restaurants. As an Italian, I am frequently solicited for recommendations regarding my preferred Italian restaurant. A welcoming atmosphere, an extensive wine selection, and exceptional culinary offerings await you.
De Wan by Chef Wan, featuring authentic and traditional "Kampung" style Malay cuisine recipes. Chef Wan's talents and creativity were dedicated to De Wan several years ago, resulting in the establishment of other restaurants and cafés. The interior design is profoundly rooted in local tradition and aesthetics. The existence of multiple separate rooms contributes to a sense of homeliness and exclusivity.
For Chinese cuisine, I recommend Overseas KL located on Jalan Imbi. The renowned restaurant is essential for guests seeking authentic Cantonese food and its signature dishes.
Thyme at PARKROYAL COLLECTION is noteworthy for Indian cuisine. Upon the hotel's inauguration, we emphasized the provision of authentic recipes from Southeast India, featuring a chef from Kerala and exceptional original Tandoori ovens.
As an individual who appreciates exclusive dining experiences and distinctive wine excursions, what developing trends do you perceive influencing the realm of wine consumption?
I observe an increasing tendency in experiential wine consumption. Individuals exhibit diminished interest in merely consuming wine and demonstrate a heightened curiosity for its narrative. This results in heightened demand for:
Private wine tastings and dinners, which I appreciate, provide a more private and personalized experience.
The demand for wine tourism and travel to renowned countries such as Italy, France, and Australia involves touring vineyards, engaging with winemakers, and experiencing the winemaking process. Upon comprehending the narrative, you will cultivate a heightened appreciation for your beverage choices and exercise greater discernment in accordance with your palate.
Distinctive wine pairings — investigating innovative and unforeseen culinary and wine combinations. Embrace boldness, particularly with piquant dishes or hybrid culinary creations.
Sustainability is gaining paramount significance among wine consumers. There is an increasing demand for organic and biodynamic wines that are produced with minimum environmental impact.
Consumers are increasingly exhibiting boldness in their wine selections. There is a transition from established brands to boutique, less commercialized, and unusual grape varietals, highlighting the diversity within the wine industry.
Natural wines are produced with minimum interference, resulting in distinctive and occasionally surprising flavors. This may represent a novel trend among younger generations, characterized by infused flavors that enhance refreshment and provide high value.
Our enthusiasm for intimate dining and distinctive wine exploration matches seamlessly with these trends. I contend that these customized experiences, along with an emphasis on sustainability and exploration, will persist in influencing the future of wine consumption.

As an individual presenting numerous Malaysian acquaintances to the variety of Italian wines, what suggestions would you offer to youthful wine aficionados delving into Italy's selections?
As a distinguished ambassador of Italian wines, I assert that Italy's remarkable diversity renders it an exhilarating place for young wine aficionados to discover. From crisp and invigorating whites to robust and intricate reds, there is a selection to suit all preferences.
For novices embarking on their adventure, I recommend commencing with accessible and invigorating selections such as:
Prosecco: A sparkling wine ideal for parties and aperitifs, characterized by its lightness and effervescence.
Pinot Grigio: A multifaceted white wine that complements foods such as shellfish and pasta exceptionally well.
Lambrusco: Frequently misapprehended, this effervescent red wine is currently produced in contemporary types that are light, fruity, and ideal for informal parties.
Franciacorta sparkling wines are Italy's equivalent to Champagne, crafted in the Lombardy Region with the old "Classic Method." They are renowned for their sophistication, intricacy, and delicate effervescence.
I recommend examining refined entry-level red wines, such Chianti from Tuscany, Barbera d'Alba from Piemonte, and Valpolicella from Veneto.
After becoming acquainted with these classics, I urge aspiring wine enthusiasts to explore obscure locales and grape varietals. Sicilian wines provide remarkable value and distinctive flavors. Etna wines are distinguished by their fruitiness, elegance, and lightness, making them an exceptional option for consumers desiring a unique experience.
I propose visiting wine bars and tasting rooms to sample diverse wines and gain insights from competent sommeliers. Conducting informal wine tastings with friends and family is an excellent method to exchange bottles, discuss findings, and elevate the overall appreciation of wine. The social dimension of wine fosters indelible experiences and enduring memories.
I foresee increased travel to Italy and recommend including vineyard tours and relaxed lunches at local wine bars in the itinerary. Numerous businesses present extensive wine lists and provide possibilities to sample wines that are seldom exported, delivering a distinctive and genuine experience.
Sharing my enthusiasm for Italian wines with friends has been profoundly gratifying. By highlighting their diversity, accessibility, and social appeal, I aim to motivate young wine enthusiasts to explore the intricate realm of Italian agriculture.
In the realm of French wines, do you prefer the strong elegance of Bordeaux or the nuanced complexity of Burgundy?
A quintessential conundrum for wine aficionados!
Choosing between Bordeaux and Burgundy is challenging! Both regions cultivate exceptional wines with distinctive attributes. I profoundly appreciate the strength and composition of Bordeaux blends, while I am enchanted by the sophistication and terroir representation of Burgundy. The decision ultimately hinges on the occasion and my disposition. At times, I desire the audacity of a Bordeaux, but at other moments, I am attracted to the nuance of a Burgundy.
I have a special affinity for the wines of Saint-Émilion in Bordeaux, while simultaneously being captivated by the Grand Crus of Côte de Nuits.
My proficiency in wine pairing has been enhanced by Malaysia's varied culinary landscape, which presents an extensive array of flavors and textures. Each combination necessitates meticulous research and trial to guarantee that the wine harmonizes with the cuisine, whether it is robust and spicy or subtle and delicate. The objective is to achieve equilibrium, ensuring that neither the food nor the wine dominates the palate.
My concealed culinary aptitude, along with my fervor for Italian cuisine, is unparalleled. I have already devised my own food and beverage enterprise and am presently seeking the ideal location.
Debbie and I recently hosted a culinary session showcasing Château Troplong Mondot, presented by its brand ambassador, Thibault Odent. It was both an honor and a distinctive opportunity to create meals that enhanced the reputation of such a prominent Bordeaux estate. It becomes unavoidable that I must arrange a comparable session focused on Burgundy wines, despite having already presented numerous events centered on Italian wines, naturally!
In the realm of French wines, do you prefer the strong elegance of Bordeaux or the nuanced complexity of Burgundy?
The emphasis for 2025 will be on tailored experiences, including vertical and horizontal wine pairing dinners, vintage wine tastings, and enhanced knowledge sharing among producers.
We must enhance our engagement with forthcoming events in Kuala Lumpur and proactively communicate with key stakeholders to orchestrate unique launch events.
Are there any planned excursions linked to wine?
We are presently organizing a vacation to Italy for late March. We intend to visit cities like as Milan, Alba, Florence, the Chianti and Montalcino districts, and Valpolicella.
The forthcoming wine trip will likely commence in Bordeaux, France, with a potential subsequent visit to Burgundy. These are all commendable programs that require several months of prior arrangement. A clear calendar is essential for effective planning.
