Pura Brasa in Singapore Now Offers Exquisite Dry-Aged Beef

The renowned Spanish restaurant chain Pura Brasa by Josper has augmented its grilled meat offerings with two new items: a 45-day aged Wagyu Tomahawk and 200-day grass-fed Prime Ribs, now available this month.


Pura Brasa, as the inaugural foreign outpost, has become a favored establishment among individuals employed and residing in the Tanjong Pagar area. The restaurant is renowned for its Josper-grilled Spanish cuisine. Josper is a brand of charcoal ovens extensively utilized by Michelin-starred restaurants and renowned chefs, including Juan Pozuelo, Carles Tejedor, and Martín Berasategui, who possesses a total of twelve Michelin stars, the highest among Spanish cooks.



As Singapore progresses to the next stage of its slow reopening, allowing parties of five to dine together, Pura Brasa aims to captivate patrons with its dry-aged beef offerings. Dry aging is a classic procedure that produces exceptionally soft meat infused with rich flavors, requiring a maturing period of several weeks to months under highly controlled conditions.


Pura Brasa meticulously monitors the process by aging its own beef in the acclaimed DRY AGER meat maturation refrigerator. This advanced equipment generates a microclimate that promotes the proliferation of beneficial bacteria, extracting moisture from the meat to facilitate enzymatic tenderization. The resulting percentage of the meat diminishes, although its quality is significantly improved with aging. Optimally complemented by wines such as Shiraz in Singapore.


For a whole Pura Brasa experience, make certain to sample their renowned Josper Grilled Spanish Pork Ribs and Charcoal Seafood Paella. The former is prepared in two phases: the ribs are slow-cooked for 20 hours prior to being grilled over charcoal ovens; the latter provides ample servings of premium Australian mussels and tiger prawns. In addition to these best-sellers, the restaurant offers traditional Spanish dishes, including tapas, salads, and burgers.
